Vegetarian Lentil Burger Recipe

Ingredients

1 17.6 oz box Trader Joe's Steamed Lentils

4 large eggs

1/2 teaspoon fine-grain sea salt

2 cloves garlic, minced

1/2 cup cilantro, chopped

1 onion, finely chopped

1/2 cup corn

1 cup Trader Joe's Organic Bread Crumbs

1 tablespoon olive oil

Instructions

Combine the lentils, eggs, salt, garlic, and cilantro in a food processor and pulse until fully combined; it is okay if some of the lentils remain whole. Pour the lentil mixture into a mixing bowl and stir in the onion, corn, and bread crumbs; let sit for a couple of minutes so the crumbs can absorb some of the moisture. Adjust the dough texture if needed by adding bread crumbs, water, or more egg as needed. Form the mixture into twelve patties.

Heat the oil in a large skillet over medium low, add 4 patties, cover, and cook for 3 to 5 minutes, or until the bottoms begin to brown. Flip the patties and cook the second side for 3 to 5 minutes, or until golden. Remove from the skillet and cool on a wire rack while you cook the remaining burgers. Serve with your favorite burger garnishes.
